750 ml bottle into tulip glass, 2017 vintage bottling. Pours slightly hazy pale golden yellow color with a 2 finger fairly dense and rocky white head with great retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation. Aromas of big lightly tart lemon, lime, strawberry, orange, grapefruit, peach, pear, melon, red apple, white wine, citrus peel/zest, peppercorn, wood, mint, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread, light biscuit, light leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, citrus/fruity/earthy hops, and moderate bready malt notes; with great strength. Taste of big lightly tart lemon, lime, strawberry, orange, grapefruit, peach, pear, melon, red apple, white wine, citrus peel/zest, peppercorn, wood, mint, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread, light biscuit, light leathery/musty funk, and yeast earthiness. Light-moderate peppery yeast spiciness; pine, zesty, herbal, floral, grassy bitterness; and slight Brett tang/tartness on the finish. Lingering notes of tart lemon, lime, strawberry, orange, grapefruit, peach, pear, melon, red apple, white wine, citrus peel/zest, peppercorn, wood, mint, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread, light biscuit, light leathery/musty funk, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity/earthy hops, and moderate bready malt flavors; with an awesome malt/bitter/spiciness balance, and no astringent flavors after the finish. Moderately crisp/clean finishing. Light-moderate increasing dryness from bitter/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately bready/grainy, fairly sticky, and slightly acidic/tangy balanced mouthfeel that is fantastic. Zero warming alcohol for 7.1%. Overall this is an outstanding dry hopped Brett saison! All around awesome complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity/earthy hops, and moderate bready malt flavors; very smooth, crisp, clean, and refreshing to drink with the modestly bitter/spicy/drying finish. Has aged wonderfully over the year on the Brett, and you still get plenty of hop character. Awesome well rounded Brett/Saison yeast complexity with balanced citrus/fruity/earthy hops; nice bready malt backbone, with minimal residual sweetness. A highly enjoyable offering, and spot on style example as expected of the brewery.

Rustic saison with strawberry and melon hop profile. Earthy, well water minerality, & light funk. Soft mouthfeel and creamy carbonation. Lightly dry finish. Outstanding saison!
