A good saison for appetizers and a table of pizza.
The goal with such food is to make sure that the ale cuts through the grease and cleans the palate.
With Tradition's high acidity (mostly lemon), it scrubs. But, I would not pair Tradition with subtle foods.
I got an inch head, but it dissipates and a thin dishwater Look is left. Misses the appeal button. Smells are one dimensional with the lemon... and I really prefer getting aromatics from yeast in a saison; part of the living food. Tastes elevate in their simplicity as the lemon recedes and other flavor come to play for a brief time. Tradition finishes dry, too dry to drink by itself... but good with aforementioned foods.
I want to like Afterthought, but I do not feel they have hit their stride as a house specializing in the saison. The yeast lacks depth.

Pours golden with a ton of white foam. The smell and taste are pure and the same, wonderful belgian yeast, wood root, lemon, slight honey, big wildflower, grass, soil, pear, and a lingering acidic funk. Very nice, simple yet refined. Body could be a bit broader in complexion, but still hits the spot
