473 mL can from the LCBO; dated Apr 17 2025 and served slightly chilled.
Pours a cloudy golden yellow colour, rife with chunky sediment that settles out over time. One finger of loose, bubbly white head quickly collapses, reduced to a thin, frothy collar and a few wisps on the surface; scant lace production. It's visually underwhelming - but I can look past that because the nose is fragrant and inviting. Lots of coriander, as well as orange peel, wheat and grainy, crackery pale malts, as well as some floral notes.
A very solid witbier that is a bit spicier than average. Rich malt backbone of bread, grains, wheat and crackers, paired with a robust, citrusy orange peel note that helpfully adds both acidity & bitterness to the profile. Coriander spice asserts itself on the back end, with citrus peel, wheaty malts, floral notes and peppery yeastiness fading into a spicy aftertaste. Light-medium in body, with lively carbonation that adds some spritz to this brew's smooth mouthfeel. Refreshing, but maybe not the most crushable witbier.
Final Grade: 3.92, a B+. Witbiers are a style that I have drifted away from over the years, but Merit's Ultra Summer is one of the better examples I've had in recent memory. The orange peel and coriander spiciness are both potent - and while this fact does make for a brew that I wouldn't necessarily want to quaff one after another, I can guarantee that one of these would leave me completely satisfied on a hot summer evening. Great stuff; something to keep an eye out for next year, when the warm weather returns.

At my lady Pamela's house; canned and chilled, 473mL in a weizen glass. From The Roundhouse Centre LCBO in nearby Windsor. Canned April 17/25. My eighth beer from the Hamilton, Ontario brewery, and third for 2025. With Gracie the cat...

From a can dated 17-04-25. Swirl poured a 473ml can into a glass. A two finger off white head on a hazy light amber. Some floaties there. The head diminishes to a weak layer. Some patchy lacing.
A weak spice smell. Moderately spicy in the first sip. Fresh coriander up front. No detectable citrus. A medium sweet finish.
A medium body and carbonation. Overall true to the Witbier style but not outstanding.
