This is a classic saison with the fresh, earthy, floral tartness that we have come to love in saisons. But, it has the brilliant unusual flavor of locally foraged thyme which shines through in the flavor profile. It looks beautiful off the tap at the brewery and was a wonderful thirst quencher on a hot summer day.
