There are few beer drinking experiences that approach perfection like the one possible at Mahrs Bräu in Bamberg, Germany. Order half-litres of "aU" beer from its historic schenke, repose in its picturesque beer garden and have a drink: you're bound to be enamoured by one of the world's most satisfying lagers. It is with these memories in mind that we brewed Ikinuki \ 息抜き (meaning: to breathe), Godspeed's interpretation of a Bamberger Ungespundetes Kellerbier. It pours a dazzling unfiltered golden-bronze colour with a dense, billowy white cap of foam. Our kellerbier underscores a pleasant depth of malt, with notes of fresh toasted bread crust and toffee that washes across the palate like a smooth blanket. Noble hops add a fair degree of bitterness and floral character to the beer before it finishes with a faint whisper of smoke— this is a nod to the epicentre of beechwood smoked lager after all...

12 ounce can packaged January 12, 2026 from the brewery in Toronto.
Pours a clear dark amber colour with copper tones and a finger of a slightly tawny off white head.
Nose of toasty malt, some hint of coffee roastiness, caramel, with a soft background of smokiness - a hint of sugar cured bacon that is lingering hours after the meal.
Sweet toasty grainy malt on the palate, caramel, toffee, a gentle smokiness and some leafy hop bitterness.
Super smooth light medium mouthfeel with slightly muted carbonation and a clean bittersweet finish.
Alarmingly easy to drink smoked beer (perhaps as training wheels for the more aggressive Rauchbiers out there - this falls closer to Brauerei Spezial Lager than the Schlenkerla mainstays).

355 mL can, day 12 of the 2022 Toronto Brewing beer advent calendar; dated Oct 27 2022 and served slightly chilled.
Pours a clear amber-bronze colour, generating less than a finger of loose, foamy white head that vanishes within a minute or two. A thin collar is all that remains, save for a few filmy wisps on the surface; minimal lacing at first, but there's some stringy deposition as the level drops. Subtle beechwood smoke on the nose, in addition to more typical aromas of bready malts, toasted grain and a touch of caramelized sugars. The smoke gives it a vaguely 'meaty' character, not unlike a rauchbier (albeit toned waaay down).
The flavour profile is similar, though I'd say the smoked malt is a tad less obvious here (vs. on the nose). Bready pale malts & coarse graininess, with hints of caramelized sugars and toasted malt. Mildly spicy and grassy on the back end, with, lingering suggestions of smoked malt followed by an off-dry conclusion. Medium-light body, with moderate carbonation that adds some bite to this brew's smooth, somewhat creamy mouthfeel.
Final Grade: 3.9, a B+. I like Godspeed's Ikinuki Ungespudentes Kellerbier... but at the end of the day, the smoked malt obscures the other, more style-appropriate flavours of the beer. For someone who craves smoke (like me), this may be a forgivable sin - but folks who don't much care for smoke may feel differently. For that reason, I would not say this is an especially approachable or 'representative' example of a kellerbier. Still, it's interesting enough to be worth a look, and I'd pick it up again if presented with the chance.

S - Malt forward aroma smelling at the same time of butterscotch candy, pale malt, and soda crackers. Malt character leads into a finish that is short, sweet, and gently earthy.
T - Mouthfeel is smooth and buttery. Malty sweet to start. Like the nose, flavor is caramel malt leading into a smooth, rounded center. Finish is short and only slightly bitter with european hops.
O - Overall, a very decent representation of the style. flavors are straightforward and direct, overall very smooth and nicely balanced. A lager with some decent character.

Beautiful, rich amber body, like a jewel, with some chill haze; forms thick, bubbly head, egg white, with good retention.
Light aroma, balance of grain-sweet malt and hops, mild yeast esters.
Feel stands out, creamy and full feeling, almost unctuous, with fine carbonation, medium body. Flavour is reserved, with lightly sweet grainy malts and a more pronounce spice hops; there's a minerality to it that lingers with the hop bitterness; medium dry finish; hint of caramel malt.
Lacks complexity, comes across flat tasting, though the feel is great.
