Last year marked 10 years of Daisy Cutter Pale Ale. As part of the celebration, we took some Daisy Cutter into the Wyld Cove and let the microbes mix it up.
A true expression of the original as seen through the lens of the cove, Wyld Daisy features aromas of dried grass, pine, and citrus, with background pineapple and noticeable hop presence. It has a quick hit of acid upfront with a smooth, fresh finish.
We have now seen Daisy Doubled, Quadrupled, Fully Saturated, and barrel-aged. Thank you always for supporting the brew.

500ml bottle, dated 04.30.2020, poured into a Half Acre "occult" snifter glass.
The beer pours a cloudy copper color, golden and honey hues with a finger of white head that has moderate retention and a few spots of lacing. The aroma is nice, bacterial funk, candied hop, berry fruit and citrus peel, very floral with a nice grassiness and lots of biscuit. The flavors are good, lots of nice hoppiness comes through, tropical citrus, berry fruit, the floral and dank hallmark of Daisy Cutter is instantly realized but with a nice addition of candied hop, sweet biscuit and crusty cereal grains and lots of bacterial funk albeit with a touch of vinegar. The mouthfeel is good, coating and crisp with a light and lively medium body that finishes with a tart and dry bite.
Verdict: A nice Wild Ale from Half Acre. Unique and interesting yet the floral and dank signature of Daisy Cutter is still front and center, which is really terrific. A fun and interesting rendition of a Chicago favorite.
