Triple barrel barleywine aged in bourbon and cognac barrels.

This triple barrel variant is the result of Wilderness of History, our double barrel barleywine first released in December 2023, experiencing an additional stay in Cognac barrels for a final surge of complexity. This beer exemplifies how wood, age, and spirit makers affect beer in different stages. The first round of aging in Weller barrels yielded a sweet barleywine with the characteristic honey-molasses flavor often found in the style. The second round aged in Russell’s Reserve barrels upped our ABV considerably, offering more alcohol to balance the sweetness and lots of chocolate and caramel flavors, which complement the fruit medley and honey flavors already present. A final residence in French Oak Cognac barrels blend in complex tannin and oak flavor to round out the final drinking experience.

A dark, ruby brown touts aromas of oak, specialty truffles, and a grab of dried cherry, pitted date, and yellow raisins. The exact hope of warm alcohol resting tastefully in the pocket of measured recipe and process. We aimed for the impression of Cognac, so we carbonated this edition significantly lower than typical. Let it warm, pour hard, and let it ease you down from the holiday hustle.

Poured from a 12oz can into a Mikerphone tumbler. Pours a murky dark brown with some bubbles here and there. No foam or head really to speak of. Intense alcohol with dark fruits, oak and caramel. Has a port wine quality to the nose and taste and it’s honestly so smooth for 19% and how intense the barrel is. Caramel, toffee, oak, cocoa and light vanilla. This is insanely good. So smooth for how big of a beer it is. Full mouthfeel. After a while in the glass the last few sips are my favorite.

Look: The beer pours a deep, opaque amber, with a light tan head that dissipates quickly. No surprise given the ABV. Tears stream down the glass as it’s swirled, foreshadowing the brutality that lies ahead.

Aroma: Dominated by heat, but as it warms, the aroma is a blend of oak, vanilla, and dark fruit. Notes of caramel, coconut candy, and hints of raisin and fig. The bourbon barrels provide a subtle warmth, with hints of spice and a touch of char.

Drinking: There is evil in this glass. Tempting you to keep sipping as it beats you over the head every time you do. The oak and vanilla tootsie roll are prominent, but never overpowering. The dark fruit notes shine through, adding a touch of sweetness and complexity. Warmth is this beer’s biggest ally, as the booze counterintuitively backs off and lets the big flavors shine. The finish is very long, with a lingering sweetness and a gentle warmth.

Feel: The carbonation is low, but well suited to a beer like this. Smooth on the palate, heat is spot on and oak doesn’t dry you out.

Overall: A brewery that’s been going strong for a long time continues to create magical, barrel-heavy leviathans. Sold out in a matter of milliseconds, this is the best beer they’ve released in their history. Brilliant.

Blackstrap molasses and dark caramel malty, red dark fruits, oak tannins, and a bourbon and cognac barrel boozy nose on this one! Taste follows with those caramel notes and raisiny dark fruits upfront...and then a prominent and smooth yet complex bourbon and cognac barrel swallow. This finishes a touch dry on the backend and could be a touch sweeter upfront to balance things out IMO, but I can appreciate the complexity of the barrels here. This is outstanding!

On draft at Half Acre.

TB Wilderness is definitely a step up from Wilderness of History. It has a bigger bolder barrel presence, yet remains incredibly smooth. This is probably the best Barrel aged Barleywine from Half Acre to date. I was a huge fan of World of Bog. Just saying...

Overall: Really bummed that I got shut out on the cans. The consolation prize of drinking this nectar on draft at the source is well worth fighting the traffic to get to Half Acre Balmoral. I would do it again in a heart beat!
