This 2022 harvest beer was made through a native fermentation of white Rhone varietals grown on the top of Red Mountain.
Roussanne, Grenache Blanc, Viognier, Marsanne, and Clairette grapes were fermented on their skins and blended with aged saison made with spelt, wheat, oats, and barley.
This beer was refermented to condition in the bottle with local raw star thistle honey.

Poured from 750mL bottle into my BeerAdvocate teku. This bottle is from 2022.
Appearance: medium golden hue with a light dash of haze and a large head of frothy eggshell foam. Quite pretty.
Smell: rich, heady, and vinous; I get plenty of saison character backing the bright, acidic grape qualities. The honey also really comes through for me, so though it smells tart, there’s an earthy sweetness underneath. Very enticing indeed.
Taste: right at first is some tartness and astringency, but it’s rounded out very quickly with sweetness. The saison character takes a bit of a backseat to the grapes here, but still the overall effect is very balanced and nuanced. The more I sip it, the more I appreciate the balance of sweetness with tart/funky complexity. Really, really good.
Mouthfeel: medium-rich body with a nice carbonation and creaminess. Perhaps not the richness I might expect from a bottle-conditioned behemoth such as this, but still, good.
Overall: this is a super tasty beer that is just continuing to grow on me. I’m sure I’ll need a nap later, though.
