INFORMAL #6 is a blend of saison and a 4 year old barrel aged beer, refermented on second use Grenache must, double dry hopped with El Dorado, and conditioned naturally in the bottle. We're happy to share this moment with you.

(750 ml bottle; purchased at the brewery a month ago... decanted into quasi-copita glasses)
Orange-amber liquid, mild haze; firework foam on pour, razor thin collar... on the nose: grapefruit, barrel funk, slight hint of aged hops, smoky dried flowers; in this glass, excellent expression and intensity... on the palate: herbal spice overtone, big fruity bittersweet orangy underbelly; aftertaste: lightly funky, burlap, dried grass, grapefruit marmalade (sans sweetness)... stealth effervescence, latent gas; fuzzy-plush texture, soft pillowy swell, rolled-off smoky-bitter bite pinging the back of the tongue... flavors and aromas quite different in the copita over the plastic cup from which I tried a draft version at the brewery; (dry) hops expression seems more restrained here, perhaps accentuating the bitterness; well-balanced, dynamic; the hops maybe restrict uniqueness, but this is otherwise bold and beautiful (1861)
