Pale Sour Aged in Gin Barrels with Dried Limes and Quinine
6.8% ABV
This beer is a blend of two beers aged in gin barrels from McClintock Distilling (Frederick, MD). The older portion was a firmly acidic golden sour, while a younger beer that was more herbal and earthy. We added dried limes for a Sprite®-like finish and a quinine extract for a faint woodsy-earthiness and balancing bitterness. The flavors took inspiration from Gin & Tonic, but we weren’t trying to brew a bottled cocktail!

(375 ml bottle, crown cork; purchased single at the brewery last night... poured into a Sapwood wine glass)
L: clear, but lightly-hazy, slightly-yellowed light amber liquid; beautiful, silky, tight white foam on the pour, receding relatively quick, leaving a thin cap and clingly collar... a couple of sparkly, broad bands of lace... suspect label, looks like it says 'Branca' if you squint
S: fantastic; explosive immediately after the pour... quite Saison-like; baby powder, white grape, hint of vinyl pool liner... after a few minutes, an overtone of spiced apple-topped danish... later, floral (lavender) bar soap
T: gin barrel-aging subtly apparent with a moderate herbal peppery simmer up front, in the middle... by the second sip, the lime and quinine move forward more, lingering more in the aftertaste... delicate toasty sugar cookie mask to the malt, that accent holding in the aftertaste; overall stark dryness... by the end, the established flavors are joined by more pure malt and nutty yeast nuances
F: whispering lushness to its body and flow... remarkably dry, bordering on parching; mild lingering boozy warmth... soothing, quieting; tingly, stunning
O: honestly, this is the (or a) type of beer I dream about, one folks who love these barrel-aged, quasi Saison creations would love to execute through our own homebrewing... should've bought another bottle or two; luckily it's just me here and I'm not yet halfway through it (2266)
