Spelt Grisette
Brett Taylor from Brooklyn's Wild East Brewing sent down a sample of his house Brett-Saison culture for us to ferment this collaborative Belgian-inspired Grisette. We added bready Maryland-grown spelt from Migrash Farms in the mash, and citrus-spice Czech Saaz we selected in the kettle. Brett's house culture brings bubblegum and clove, but we expect Brett's Brett to bring more funk as the beer bottle conditions if stored cool (not cold)!
