A blend of golden sour beers aged in oak barrels with deconstructed peach cobbler.

It started with a simple craving. Things got complicated very quickly. Our mixed yeast and bacteria cultures really enjoy gobbling up sugars and producing alcohol and carbon dioxide, leaving the finished beer quite dry and un-sweet. It was a challenge to lend dessert-like qualities to this beverage, but through skilled use of ingredients like pureed peach, vanilla, nutmeg, cinnamon, almond and pectin, we’ve managed to create a beer worthy of being served in that coveted after-dinner timeslot.

375 mL bottle from the LCBO; dated Aug 10 2022 and served barely chilled.

Pours a foggy golden-orange colour, crowned with one finger of foamy white head that sizzles off within ninety seconds or so. A tight collar of creamy suds is left encircling a few filmy wisps on the surface; not a lot of lace deposition. Light cinnamon and nutmeg on the nose, with subtle hints of peach fruitiness, lemon, vanilla, brown sugar and candied nuts. Lightly oaked, with just a twinge of funk and vinegar.

Lots going on here: I'm getting sweet ripe peach flavours at first, but sour peach comes to dominate later on. Mixed in are notes of lemon, amaretto and nutmeg, with a puckering acidity gaining steam towards the finish - very sour, like lactic acid and cider vinegar, with hints of oak, vanilla and brown sugar. Briefly lingering hints of almond, spice and oak as the sourness reverberates into the aftertaste, which dries off considerably. Light-medium in body, with low carbonation that weakly agitates the tongue; feels smooth and a little tongue-coating, with decent drinkability.

Final Grade: 4.04, an A-. While Disassemble : Reassemble is an undoubtedly solid peach sour, I wouldn't say it's some of Small Pony's best work. I say this mostly because of my own personal tastes - i.e. I am not real big on cinnamon, nutmeg or vanilla, especially in the context of sour ales. Thankfully, there's so much going on within the flavour profile that I can focus on the elements that I *do* like, such as the oak, the almond, and of course the peach, rather than the spices. Highly recommended to lovers of peach sours, or barrel-aged sours in general.
