The second in our series of fruit and smoked wild ales. Ember & Orchard is a wild red ale aged in oak with our house cultures. After about 12 months we racked this beer into bourbon barrels on spent cherries from Oud Creature and added fresh cherries on top to referment for an additional 6 months. We then blended fresh vanilla beans and El Salvador cascara smoked over cherry wood by our friend Zizzo BBQ. The result is a beautiful red sour that is extremely complex, yet approachable with loads of cherry and a touch of smoke. The beer finishes with a bit of sweetness to balance everything out. We hope you enjoy this wild spring sour.

Appearing hazy, even muddy brown at first, the apparent chill haze dissipates to a glowing but dark ruby actually, under a short lumpy tan head that dies off slowly to a merlot-like surface, but for a few rising bubbles.

Aroma starts with a distinct cherry-like Flanders sour note enhanced by a bit of barrel char. The char blooms further due to the cascara into smoky, savory and unctuous qualities, all delicately yet firmly present.

Taste is thankfully less sour than the nose warned, as the effervescent medium body actually becomes lighter towards the swallow. Toasty malt and tart dark cherry pair with mildly smoky, savory wood and roasted almond. Bready, even cheesy funk emerges and softens the entire palate, like brie, in the semi-dry finish. A touch of cherry skins and tannins, even emulating a bit of red wine grape, pairs with a touch of roasted coffee as I dig in.

This is just too unique, while remaining plenty drinkable, not to love. The smoke is plenty tolerable and pairs well with the softening funk as well as the livening tartness.
