Pours a foggy copper with a finger of white foam. Aroma is very light and delicate, with notes of flowers, spicy hops and modest well-tamed bread yeast. Flavor profile is flowery, herbal, spicy hops with light bready, biscuity malts. Yeast is bready, with a little smooth roundness at the back. Alcohol comes through a little on the back. Mouth feel is medium-thick with a lightly fuzzy texture. Overall, light and delicate with alcohol poking through. Little rough, but still a nice sipper.

my first beer from these guys, i did not realize it was as strong as it is, it really doesnt drink like it at all. i mean sure it has some body, but i assumed from some nice fluffy wheat in the mash, and its full flavored, but i have come to expect that from this newly popular or rediscovered norwegian saison yeast, the alcohol came as a surprise. lots of character to this, mostly from the yeast, juniper and gin, warm copy paper, white pepper, and even sage, very botanical, earthy, and fresh to me. the wheat malt is simple, maybe some raw wheat in here too, and for being so clean on the fermentation, the beer does have a little bit of rustic charm from the grain base, and i love that in a saison. solid carbonation and pretty good attention to detail evident. the fermentation might just be a tad warm, this finishes with some almost phenols, lingering longer than the rest of the beer, which is just off dry. cool effort overall, i like seeing what different brewers come up with for this yeast, and this is another cool showcase of it. well done.
