The Great Earth Beneath Our Feet is co-fermented in stainless steel with an American saison yeast and a unique variant of Brettanomyces Bruxellensis (wild yeast) for a bone dry beer with prominent impressions of white wine, pineapple, fresh hay and mulled lime zest. A huge portion of spelt malt in the mash, as well as glycerol produced during fermentation provides a lovely soft, somewhat full mouthfeel despite being such a dry beer. A large whirlpool and dry hop addition of New Zealand Wai-iti provides even more depth and lime character to the flavor & aroma profile. Bottle Conditioned.
