Lightly hazy, straw color with a small foamy white head. Mediocre retention. A small head lingers.
Smells like banana, lemon, clove, cereal grains, vanilla, pink peppercorn.
Smells exactly like the nose. Banana upfront, which lingers through the finish. Lemon, then crispy, white cracker malt. Pink bubblegum and then clove and a hint of pink peppercorn on the finish.
Medium feel, fizzy carb, not effervescent, thick, or light--a happy medium, though nimbly bodied.
Overall, this is a stupendous saison.

A table saison.
Common to young brewers making this style, it needs a more lively yeast.
This Saison Looks OK initially, but the foam fades quick and there is virtually no protein swirl. Smells are better as I get the apples and mixed malt bill. As for Tastes, this too is undistinguished... but at least it uses hops in a balanced way. In the mouth, thin is thin. Many American yeast houses sell a Belgian saison yeast... I'm beginning to think only a few sell a good one, or one that young brewers know how to keep.
On the other hand, one of my major tests for a saison is does it pair well with many foods. And this one from Buried Acorn probably will go with a range of foods. It just won't make an average meal taste better like a master saison maker would.
