Imperial stout aged in a Weller Special Reserve barrel for 15 months, then conditioned on white macadamia nuts, Dominican cacao nibs, Marcona almonds, dark grade maple syrup and beans roasted by Mostra Coffee. The flavors blend together to envelope the senses with creamy charred oak, exotic nuts and a fresh morning roast.
2021 Orange Wax - This Imperial Stout was aged in a Makers Mark Barrels for 18 months. Then, we conditioned the beer on white macadamia nuts, Dominican cacao nibs, Marcona almonds, dark grade maple syrup, and Barrel Aged Prometheus Coffee from Mostra. The flavors blend together to envelop the senses with creamy charred oak, exotic nuts, sweet maple, and a fresh morning roast.

2021 vintage (released on 9/25/2021); consumed on 1/2/2023
Pours a slick, motor-oil black body topped with three fingers of fluffy, pale khaki foam; solid head retention leaves ¾ of a finger of creamy cap, expansive, silky collar, and light array of spotty lacing strewn haphazardly around the walls of the glass.
Aroma beings a soft maple prominence cut with cocoa nibs and nutty macadamia sweetness as fresh coffee threads into a lesser vanilla and light whiskey offers quiet, oaky heft across the bouquet.
Taste shows airy coffee upfront as bourbon imbues a rich chocolate profile on the mid-palate, with accents of toasted walnut, nutty vanilla creme, and bakers chocolate swirling through the back end as sticky maple lingers on the finish.
Mouthfeel offers a medium body and a fluffy air of moderate carbonation trending high before settling to a drying char lingering in the backdrop; a minimal residual warmth eases as a slight stickiness peeks through the finish.
Despite the lesser barrel, the bourbon influence is deft and resonant, playing quietly within a rich adjunct harmony to highlight distinct threads of roast and sweetness; a disciplined display of excess from Mortalis' barrel program.

2021 orange wax BA Prometheus. Poured fridge cold to a Glencairn glass. Color is a dark mahogany brown with a dark mocha ring of a head. Nose is strong a foot away, smelling oddly enough of fresh orange milk chocolate. First sips have that orange chocolate taste, despite no orange in the mix. I assume it must be a trait of the dark maple syrup, although there is a subtle but full sweetness without a mapleness. The macadamia and almonds offer a distinct nuttiness, albeit a new blended flavor that really brings out savory flavors. Cacao nibs are almost always awesome in big stouts, with this being no exception. A chocolate liqueur flavor dances around and mingles with the dark syrup sweetness. I don’t really get a strong coffee element at all…maybe if I imagine it blurring in the middle, not prevalent like some of the Mortalis Mostra beasts. Alcohol hides entirely. Mouthfeel is excellent, full, creamy, with lots of lingering flavors. I really need the wife to go to line crawls with me so I can get more than two at a time of such delicious brews.
2024 Jan version update: Slightly different profile in that the Willett barrel takes an assertive lead role. It works well, though at first it comes off a tad too bitter and acrid. After about ten minutes aerating, the maple syrup comes in to blend with the coffee for a nice mellowing effect, without sacrificing any bourbon bite. Line crawlers said they weren’t stoked about this because of the maple, but that’s an absurd premise to me. I think this is one of their sleeper winners. The 2021 held up perfectly for two years, I think in part BECAUSE of the maple. I got five, now four, one to trade…there were still some left, so maybe I try to get more. $30/500ml.
2024 Bottle #2 update (April): Infected I believe. Coffee, maple, creamy nuttiness all gone, replaced by sour red wine profile.

This one pours a very dark black color, with a very small head and not much lacing.
This smells like strong dark maple syrup, rich creamy coffee, dark chocolate fudge, almond liqueur, roast, oak spice, chocolate chips, and macadamia nuts.
This is absolutely pastry to the max, but the barrel does a lot of heavy lifting in balancing out the sweetness. It’s one of Mortalis’ more balanced pastry stouts. As the adjuncts go, the coffee and maple are the shining stars. The maple is sticky and not too sweet, as it seems to be a very dark amber grade. The coffee plays well with it, adding chocolate, cookie dough, and some maraschino cherry type flavors. There’s a lot of oak spice, with some leathery and tobacco flavors from the bourbon. The almond and macadamia are less prominent, but they do add a nice nutty sweetness on the back end.
This is really creamy, with no booziness at all. It’s so smooth and dreamy.
Mortalis’ BA stouts are always what makes me the most excited.
