This Stout does not match its appearance. It is a full-bodied Golden Stout aged 14 months in a store pick Privateer barrel. Then, we aged the beer on Golden Grahams and coffee. Who doesn’t like the milk left at the bottom of a cereal bowl? DO NOT DRINK TOO CLOSE TO THE SUN!

2022 vintage (released in 9/2022); consumed on 10/27/2023

Pours a foggy, burnt copper hue topped with a finger and a half of soapy, off-white foam; decent head retention leaves a tentative layer of cap, persistent, frothy collar, and minimal-no lacing holding with any longevity to the walls of the glass.

Aromas of fragrant dark roast coffee settle beautifully into gooey chocolate and touches of toffee, with a slight honey drizzle phasing through snickerdoodle cookie dough at the bouquet's peak; boozy Honey Grahams cereal milk soaks a deft, airy wave of bourbon and oak char on the back end.

Taste offers rich milk chocolate laced with fresh coffee, progressing to a roasty build contrasted with waves of honeycomb as bourbon meets burnt vanilla over the latter half of the profile.

Mouthfeel shows a body veering full with lower-end carbonation; a creamy aspect engages upfront, with oncoming crispness matching more subdued, boozy weight past the mid-palate, where the finish is slightly charry and on the drier side.

Sweetness is supportive to barrel-laden potency in a cogent and fitting juxtaposition rife with deceptively balanced waves of silky cocoa and vivid honey amidst a well-integrated bourbon profile.

This one pours a slightly murky golden brown color, with a small head, and not much lacing.

This smells like sweet honey, caramel, maple, caramel, just a little touch of rum, some oak, and cinnamon.

This is definitely quite sweet with not enough barrel. However, the rum is definitely there, a little bit, adding just a hint of oaky spice and some light heat to help cut the sweetness down just a touch. There’s lots of honey and caramel here, with some sweet coffee notes, cinnamon, and vanilla.

This is medium bodied, just slightly syrupy, with very little booziness.

I’ve always really liked the regular Icarus, so I was very excited to see that this one was coming out. I want a lot more barrel here, but it’s still really tasty nonetheless.

On the pour, you’re greeted with a lot of coffee, sweet honey, vanilla, and just a touch of lingering green pepper.

The palate leads with more of the same; the coffee is a little off, seems a touch over-roasted. That said, definitely getting some of the flavor components from the golden grahams, and it finishes predominantly sweet, with a touch of spiced honey and vanilla bean.

Viscosity is good, medium-full-bodied. Smooth, with a good ethanol warmth on the finish, especially for a 12%.
