Pours a medium golden amber with a four finger white head with great retention and thick lacing. Aroma of grainy malt, saison yeast, light lemon and apple and mild noble hops. Flavor is lightly grainy malt, saison yeast, a touch of brett, faint apple and light stone fruit; dry finish with residual light funk. Medium bodied with light to moderate creaminess and sharp carbonation. Pleased to find a saison from Spain. It seems like this brewery leans to farmhouse and wild ales, so I was hoping this would be a classic grain forward saison and it meets my preference of grainy malt with mild tartness. It's not very complex at first, with the malt and yeast fruit flavors somewhat subdued, but it opens up nicely to a well balanced nearly classic saison in the French style; but quite a bit drier in the finish, which is remarkably like a biere de Champagne and in fact is quite reminiscent in some ways to a brut Champagne, although the funk in the lingering finish gives this away. Subtle but well balanced and pleasant. A quite nice farmhouse styled saison that looks great in the glass.

De 32gp. En copa Teku. Viendo la Casa de Papel 5x04-05. Funk marcado pero sin desagradar, resultando refrescante y terminándose antes de que te des cuenta. No obstante, le echo en falta un plus que me anime a repetir

i am legitimately pumped that these beers have come to boise, so awesome, and i was stoked on how different this was from the grisette, which was not at all a light version of this, the two are wildly unique, and unique from one another for sure. this is clear through most of it, but has a little haze creep in while pouring the bottom quarter or so of the large bottle. a high and wispy and lasting white head hangs in my small wine glass, fizzing carbonation, just sexy! my bottle says 5.4% abv, not the 5.8% abv listed here, must change from batch to batch. seems more like pils malt than white wheat, maybe a little rye or something earthy in the mix, but it could be spiciness from some noble hops, this is hoppy as they go, herbal and lawn-like in the nose, some bitterness and tea qualities in the finish, simple overall, very pure, and unique on the yeast side without being wild in the conventional sense, no apparent brett or anything and only ever so slightly tart. instead its a rustic perhaps french type yeast that has a hint of pear to it and maybe even bay leaf or something with the hop influence on it, but its minimal and does not take over this at all. the grain is fresh and earthy and clean at the same time, this is bone dry, slightly vinous, and with a light mineral profile too. its also insanely drinkable with the lighter body and the bubbles, i could have had this whole bottle myself no problem, maybe even two, it just sings on the palate and is the perfect companion to countless hands of cards, chill conversation, and hours passed with someone you love. i live for saison like this, and will be back to buy the other cyclic flavors that have come to the state!
