man i cannot agree with the other review of this, its wonderful, a funky saison with a ton of earthy beets, a lovely showcase of the root and a glorious base beer, super fresh off the tank and just world class, these guys blew me away. amazing color here, deep violet pinkish purple, a bit hazy and a little viscous maybe toward the bottom, but radiant and electric looking, almost unnatural, awesome. the nose is beats all day, almost like still soil covered on the outside, just pulled, wet and raw and full of health, minerals, and earth, their house saison yeast right there with it, not much grain to me here, and some light tanginess, so interesting. the flavor is as beet forward as it smells, just insanely soil forward and rich to me, definitely nutritive and healthful, some white wine character to the ferment, super compatible peppery spice, and just a little acid against the basic beets, just fantastic. there is just a tiny bit of residual sugar in here keeping this balanced and kind of long, but i prefer it, i want this on my palate forever. i love everything these guys do, but this really is special. not to be missed, thankful to have been able to try it here at the brewery at its absolute freshest, beets fully popping! as good an expression of beets in beer as there is, on level with the cantillon zwanze day brew from a few years back, no joke...
