one of my favorite beers i had the entire time we were in spain, true glory this one, a tart saison made with plums. its sourer than other saisons i have had from these guys, but it remains delicate, just tangy not aggressively acidic, and the fruit is subtle but unique, this is truly world class. the pour is straw yellow, just a little cloudy looking, with an amazingly high rising airy and popping white head that looks belgian in the glass, a couple inches high and lasting, the bubbles are micro and there are a billion of them. aroma of piquant plum skins, their familiar estery saison yeast that hits a little french and farmy, lightly spicy, and white winey too, and then a dry earthy grist with some pils malt in it for sure, seems organic and simple, but really highly refined, the bottle has the same spray painted looking label as most of the rest of them have had, and the bottle conditioning looks absolutely on point. mouthwatering. the flavor rules, the plums are juicy and fleshy and about as identifiable and pure as i have ever known them to be in a beer, they seem accentuated by the light sourness this has, and they have definite sweetness to them, even though the beer is dry, some floral springy vibes here too, definite vinous character with the yeast, and in the absence of heavy oak or anything, this seems delicate and lively while still being funky. the plums are juicy and ripe and unique to me, yum! the ferment is puckery and gets more and more sour as it warms, but its still restrained and the saison yeast still defines this for me. some light spiciness to the finish, dry as a bone, and fully effervescent, love the mouthfeel of this, its so excited. awesome beer overall, amazing how forward and real the fruit is, and how refined the beer is, in that perfect saison zone between too clean and generic on the ferment and fully wild and yeast dominated, elite!

Semi-murky pale yellow appearance with a moist thick foamy white head, good retention, and sparse lacing. Citrus, stone fruit, funk, oak, and spicy notes. Medium body, moderate carbonation. 2nd beer from these guys and really liking them!
