We aged our spring Saison in Chardonnay casks for 4 months with brettanomyces, before adding Juneberries to age 4 months. Blended lightly with a 2.5 year old batch of Edna for added acidity and complexity.

Bottle purchased and drank at Fattey Beer Company in Rochester, NY.
This one pours a light golden yellow-ish color, with a small head, and a little bit of lacing.
This smells a bit vinegary, and extremely Brett-heavy – stinky, cheesy, and like weird smelly animals on a farm.
The combination of Juneberries – whatever they are, with the heavy-handed use of Brettanomyces just makes this kind of hard to drink. The fruit flavor is kind of like a very tangy and overripe pear, with a bit of white wine like flavor, but there’s just a sort of stale vinegary note that I do not like. It’s very stinky and sharp tasting, with a sort of weird cheese vibe.
This is light bodied, and not super drinkable.
I still do not enjoy really any of the beers that Eli Fish makes.
