Gold is a medium strength Australian Wild Ale best enjoyed in good company. Delicately balanced, gold shows notes of pepper, fresh hops, lemon zest and stone fruits. The palate is effervescent and bone dry with a subtle spicy bitterness, pillowy body and developing acidity from the indigenous flora. This beer undergoes a warm primary fermentation in wide vats before being transferred into French oak barrels for maturation. Barrels are then selected and blended to meet our desired character before being packaged and naturally bottle conditioned for a minimum of 12 weeks for ideal carbonation. Only then do we release this unspiced wild ale to be enjoyed at table with your favourite foods and best of friends.

MAY 2024. 75 cl bottle (Blend #39 - "Bottled in June 2022 - Best before: June 2025").
It appears golden, with minimal foam that disappears quickly (like a lambic).
On the nose there are immediately floral notes (of petals), slightly sweet (of nectar) and also a light bacterial note.
Floral, slightly herbaceous with an acidic note. It reminds me of the Mamouche of Cantillon, even if the acidity is different from that of Bretta and which recalls more of a woody/funky astringency but which makes drinking valuable by cleansing the tongue and leaving the delicate floral taste on the palate.
Dry finish on the tongue, flower petals on the palate with a delicate tendency towards sweetness.

Blend #23; Packaged July 2019 (best before July 2024) - enjoyed January 8th, 2023. Poured from a 375mL capped bottle into my Drie de Fonteinen tumbler.
Not quite clear gold body with a cosmic latte collar and faint surface slick. Very fine delicate lacing; OK retention.
Bright, acidic aroma with lemon and woodsorrel. Secondary funk and stone fruit aromas, and tertiary floral notes round things out.
Tart palate entry follows the nose. Low funk, herbaceous hop notes, hay, apricots, and pear lead into a medium-dry finish with some residual minerality. Very low bitterness. Well balanced and refreshing mixed fermentation.
Crisp yet soft with moderate carbonation. Low astringency.
Very well crafted/executed wild ale.

A 750ml bottle, blend #27, bottled in February 2020, and with a best before date of February 2025. Poured into a 3 Fonteinen Zenne glass.
Appearance: A lightly hazy golden colour with a one finger white head that dissipated fairly quickly, while leaving some spotty lacing.
Aroma: Funky, leather, oak, lemon zest, white grape, with apricot notes.
Taste: Tart, lightly sour, white wine grapes, oak, funky, apricot, green apple, and lemon zest.
Mouthfeel: Medium to light bodied with moderate to soft carbonation.
Overall: My first Wildflower bottle and wow, this was enjoyable. Good balance of funky, citrus and stone fruit flavours.

A: The beer is somewhat hazy light yellow in color and has a slight amount of visible carbonation. It poured with a thin collar of white bubbles around the edge of the glass.
S: Moderate aromas of oak are present in the nose along with notes of funk.
T: The taste has fruity flavors of green apples and lemons along with notes of sourness and hints of funk and oak, the latter of which is most prominent in the finish.
M: It feels light- to medium-bodied, quite tart and a bit dry on the palate and has a moderate amount of carbonation.
O: I really liked the fruits, oak, and sourness in this beer, all of which meshed well together.

Pours a hazy straw gold with a small but long lasting head of foam, excellent lacing.
Smells of tart fruit..apples and a huge Brett aroma. Kind of vinous but it's the Brett that got my attention.
Taste wise, there's the tart fruitiness that tastes apple like, some acetic sourness, grape like sourness, and very much of a Brett character that adds horseblanket and a nice dryness. All this flavour packed into a 5% abv brew!
For the abv, the mouthfeel is fine.

Taste wise, there's the tart fruitiness that tastes apple like, some acetic sourness, grape like sourness, and very much of a Brett character that adds horseblanket and a nice dryness. All this flavour packed into a 5% abv brew!
For the abv, the mouthfeel is fine.
