nice to have a clean saison with a somewhat different fermentation profile, but this one doesnt turn me on as much as i hoped it would. you cant be malty at the same time as you are estery in this style, it itsnt biere de garde, and this isnt subtle enough to be that anyway. its got some orange and ginger in it too i reckon, not too much of either, but both linger with the yeast on the swallow, making it sort of medicinal, not the old world vibe i wanted from it. i would drop some of the darker and heavier grains out of this immediately, increase the raw wheat and the earthy grounding portion of it, and it would be a better beer on the spot. i like the yeast not running away with it, but thats hardly enough to make this objectively good, and its easily the weakest of the three beers i had in here yesterday. heavy on the grain side and still with some sweetness, nice mineral profile interacting with the yeast, but its not enough, and the orange leaves some real bitterness. cool idea but not quite as dialed in as it should be. if you are going to be an american brewer doing clean saison, i need a little more from you...
