TWO YEARS later… Introducing Three Sisters, in collaboration with Gracie’s Farm, with a percentage of proceeds to benefit Saving Gracie Foundation.

Our first Spontaneous Ale, fermented beginning in October 2021, in a traditional lambic brewing process. We parked our koelschip full of wort overnight at the Three Sister’s garden at Gracie’s Farm, where airborne yeasts and bacteria from their beautiful garden naturally inoculated this beer, creating a spontaneous fermentation. It aged for almost two years in oak barrels and is finally ripe for harvest.
Aromas are ripe apricot, orange, and lemon zest, and a true hay-like barnyard funk. The beer drinks sour without being overly tart. Flavors mingle like a fruit cup; our notes are overripe orange, underripe cantaloupe, pear, and a subtle cherry tartness. The wild side of this beer puts forward a soft earthy funk that blends harmoniously with a smooth oaky flavor.

Local watercolor artist Lexi Dowdall beautifully captured the vivacious essence of Gracie’s Farm in the Three Sisters’ label.

We are thrilled to bring this one to ya — it’s truly special for us and has given us a chance to step back and appreciate what hard work and time can accomplish. We hope you enjoy.

spontaneous beer with quite a bit of time in oak, really impressive specimen, a gift from my brother in law, so good to have beer friends! this is special stuff, and while i had it in the middle of having way too many drinks last night on the fourth of july, i loved every drop and was surprised by its high level of refinement, although i guess i shouldnt have been, given its templin and all their beer is so polished. love the art on this one, the green glass is cool too for this, highly authentic even if it doesnt quite drink like lambic. crazy how clear the first couple of pours are, immaculate, and real light looking, unexpected in a style that definitely permits some haze, only light sediment at the bottom and a shot but lasting white head with slow rising bubbles the whole time. the aroma on this is cool, funky and weird, woody, white wine, dried apricot, golden raisin, some middle sweetness, wheat for sure, wet concrete type minerality, almost a salinity to me, some tartness but mostly well developed bretty funk, farmy and interesting on the ferment, definitely wild, no real hop character at all but lightly herbal at the end i suppose. the flavor is right there with the nose, some lemony acidity in here, a light white vinegar thing too, but just as much funk and its not too sour to drink a lot of, which i did. the grain is light in here, and does not taste old despite the obvious maturity through the rest of the beer. no real oxidation either even with the green glass, subtle if any. the funk is awesome, and there is a lot of fruitiness in the middle from green grapes to white peaches, sort of juicy and captivating. its obvious that its a spon beer, but its also unique to itself, unlike others ive had, and really well executed overall. lots of oak, light as can be in body still somehow, and with gorgeous carbonation that doesnt rush this but keeps it moving well. elite. stoked to have received this gift!

750ml bottle from Sledutah. Pale golden pour, airy white head, lacing. Funky aroma, fruity, cheese. Taste is lemony, woody, white grapes. Medium tartness.
