A simple grain bill of Pilsen and a touch of biscuit and white wheat malt, this style lets the yeast showcase itself. Jasper’s Yeast Belgian Saison was allowed to free rise in temperature during fermentation. A small addition of Czech Saaz and Hallertau Hersbecker work with the spicy and earthy character of the yeast. A mellow spice and slight citrus character show themselves slightly with the bready malt and earthy hops. A very sessionable Spring beer!

On tap at brewery:
Barely there haze on a yellow golden body. Nice white head forms swirls in the center of a medium-thin ring as I try to get a nose.
A bit of dry bread baked with the backdrop of a farmhouse is cut by pepper, both green bell and white spice. There’s also a little saison yeast fruitiness, but of the duller apple variety.
Taste brings a little of the apple fruitiness forward, and is light and mildly carbonated. The bread is not so noticeable though the pepper spice comes out and a late entry of bell pepper is noticed. The apple tang comes through in the end.
A fairly nice beer, but it is a saison take I am not enthralled with personally. The pepper aspect is nice, but a little too much fruit and a medium sweetness (like my saisons dry) are minor down ticks fir my personal enjoyment.
