Wild Ale with Red Raspberries and Bing Cherries
We were fortunate enough this year to be supplied with an over abundance of fresh Bing cherries and red raspberries, so it is up to you to decide which fruit is superior in this wild ale blend. Using a blend of 1-3 year old barrels of our house "Wild Tacoma" mixed culture ale, we aged this beer on whole fruit for two months and the result is a bright, brilliantly red fruit bomb, with detectable cherry and raspberry aromatics and a tart underlying stone fruit sourness from our mixed culture. Who wins?

375ml corked/caged bottle served in a pair of Cantillon glasses. Batch number 1.
Pours a pretty ruby color, maybe a slight purple tinge, clear. Small head, noisy carbonation. Smell is tart and dark. Maybe cherries, maybe plums.
Taste is very tart, makes me think of cherry skin or plum skin.
Mouthfeel is very lively, very dry, and light. Overall, pretty good.

375ml corked bottle. Deeply colored cherry red (with a touch of violet if backlit). Nice streams of carbonation, with an initial small filmy head. Really nice fruity cherry/raspberry aroma with some sourness. Taste is nicely fruity and moderately tart. Feel is a little bubbly, a little sour bite. Overall, this is a really nice combination of fruits, a good moderate level but definitely tart, and the base wild ale is a crisp flavor foundation.
