collaboration with floodland, really cool beer here, barrel fermented with bottle dregs from what they say is their favorite brewery in soy, belgium, which can only mean fantome, how fun! this definitely does have a little different fermentation vibe to it than a lot of their others, bretty without being acidic, not quite as oxidized as most of the fantome stuff is by the time it gets here, but the saison elements in the fermentation profile, the pear and white pepper esters specifically, ring familiar. light haze after the first little part of the bottle is clearer, pale straw colored, glowing low golden, short white head. cool funkiness in the nose, mature now, woody and vinous. similar to some of their others but with less acidity to me, less tannic, maybe somewhat fresher on the grain side too, earthy and almost crisp, bready, pale, simple and clean. i get green apple, fresh lemon, elderflower, pizza dough, wet grass, and some light noble hop spiciness. very flavorful, very fermentation driven, wild in a unique way, rustic, not overly dolled up or anything, spritzy in texture, warms up well, and overall is something quite special and well executed. floodland is new to me, but they have me intrigued too. this is a cool project, neat to give new life to some fantome bottle dregs, delicious beer, slightly fancy, yum.
