Featuring a red malt profile, with notes of toffee and plums, Rumored Extinct is fermented with lager yeast for crisp, clean profile. With Centennial, Amarillo, and Cascade hops, this Cold Red IPA features a classic citrus & resinous hop aroma.

16oz can served in a nonic pint. Can dated 2025-12-02. Bought it at Chuck's Hop Shop Seward Park a few weeks ago.
Pours a slightly cloudy reddish amber color, modest head and lots of carbonation. Smell is pine and toffee, grapefruit rind and citrus pith.
Taste is on the bitter west coast IPA side of hops but has a nice floral caramelized sugar sweetness. Pine bitter keeps growing as I sip. Toffee character comes out more.
Mouthfeel is maybe a bit on the thin side. Very nice beer.

Rumored Extinct Cold Red IPA from Single Hill. My first taste of Single Hill brewing. Served in a stemmed globlet. Deep red, as promised, and very clear, with loads of chestnut colored head. Not much aroma, but maybe a bit of coppery munich malt? Flavor has a crisp alpha bitterness up front but then transitions to a much fruitier, tropical kind of funk. Bitter melon along with kiwi and maybe papaya. Very much a crisp and dry finish, as you'd expect from a "cold" IPA.

Pours a copper color with a fine foamy head. A hoppy PNW aroma with some stone fruit. Bitter , but juicy, flavor. Some sweetness. Mouth-drying tannic mouthfeel with fine carbonation. Overall, a unique and pleasant IPA!
