This beer has effervescent, almost sparkling carbonation, and the flavor and aroma are dominated by the classic Belgian yeast used for fermentation.

16 ounce can into a tulip glass. Best by 10/18/22, had 8/14/22.
Pours a clear, bright golden yellow, with a big foamy head on an average pour and a decent amount of foamy lacing. Active carbonation. Aromas of Belgian yeast, malt, coriander, wheat, light black pepper, other spices, a hint of vanilla. Has a bit of a bready aroma. Flavors are roughly the same- Belgian yeast, malt, spices, wheat, some bread, a light herbal bitterness. Smooth, a good lighter medium body, well carbonated.
It’s a pretty reputable example of the style, maybe a little less malty than usual. Not top of the line, but worth a try.

Bought from Beermiscuous, my source for Chi-land micros trying to make it into the Belgian tradition.... of which Three Phase is one of, let's say, 50 micros trying seriously. Last summer, I reviewed a wit of Phase Three (Floating Free) and encouragingly asked them to work on their yeast.
For Interstellar Illusions.... The same advice repeats itself, basically. There are obvious differences in a wit yeast and the flexible saison yeast... but the same problem remains: Belgians inherit yeast knowledge and maintain it, North Americans are playing catch-up. Phase Three is accomplished, but young. The knowledge will come with more experiments. As for the yeast maintenance, that's work.
Interstellar has an interesting can with a painted peace hand signal that could've been from ET, the Extraterrestrial. But the Looks stop being interesting after the can, a very flat saison... not much life. Smells are slightly above the saison average, just not fruity enough. Tastes are balanced and have sweetish finish (which makes it an acceptable table ale that stimulates the salivaries), but not masterful. Suitable to sit in my mouth at my table.
I hope to have Interstellar again, but next year's release.... and after more attention was paid to the yeast. A Votre Sante' !
