Jefe is next on the review table. Served at 42 degrees in a pint glass. The pour created a frothy, airy white two-fingered head with average retention. The dissipation left lots of lacing on the glass. Charting the color around SRM 4 pale straw yellow. The clarity is clear with carbonation bubbles drifting towards the top. The overall appearance is above average.
Nosing the glass, I smell dried corn. It reminds me of dragging my hands through; the aromas that came were corn, minerals, and dried Arizona earth: light cracker malts, malty and corn sweetness, and a slight floral touch. Aromas come across as the brewers who used a deft hand in creating this beer for the dry Amarillo wind-swept summers.
The corn flavor is there, yet refined and mixed well with crackery malts. The malt and corn sweetness creates this unique amalgamation, giving the beer depth. Light honeysuckle with grassy and a touch of white pepper complete the flavors I detect.
The mouthfeel has a carbonic bite, finishing dry and crisp. The body is light and has high carbonation.
The beer is textbook perfect for a Mexican Lager. The beer has balance and harmony with a slight push of hops, giving it character—stellar beer to enjoy at the close of my Memorial Day weekend.
