French yeast does all the talking in this bone dry, spicy, traditional Saison Ale, a standard ration for French and Belgian farmhands. A funky interpretation of a pilsner your dad would love.

these guys do really well with the saisons and funky types, but this is one of their more basic in my limited experience with their stuff. seems like french yeast running away with this one, pils malt and pale wheat underneath it, but neither rustic nor funky farmy in any appreciable way, and as much as this is well made, its the kind of clean saison im not often too excited about. golden toned with a high belgian looking white head and great retention, bright but not all the way clear. it smells like white wine, spicy esters from the ferment, coriander and clove, a little herbal bitterness too, like dandelion green or even arugula, light lemon, a bit of a penny type metallic at the end, not out of place. the flavor follows the nose, a little floral up front, grounded just enough by the malt in here, but its all about the yeast, which is at once peppery and fruity, a hint of clean citrus followed by green grape and kiwi, a bit soapy for a second, very dry at the end which is nice, keeps this refreshing for being so yeast forward. overall pretty good, but also pretty samey, an awful lot of american made saison doing basically the same thing, and knowing what these guys can do with brett i was hoping for a little more uniqueness on the ferment. the high carbonation, mineral profile, and starchy grain base all fit well, but this was just slightly underwhelming on the whole for me...

L: Pours a brilliant clear straw yellow with a hint of orange, and a fizzy small white head and no lacing on the glass.
S: Coriander, pepper and the saison yeast is definitely present, sweet apple like malt, biscuit and toasted malt.
T: Strong saison yeast, peppery and coriander, a hint of lemon rind, a astringent spiciness, some toasted bread and a medium floral hop.
F: Prickly carbonation and medium body.
O: This is an average saison.
