Bière de Miel with pineapple sage

When September harvest arrives, the smell of tropical fruit bursts from our rooftop garden courtesy of an herb called pineapple sage. We infuse hundreds of its leaves and flowers into raw honey from Rosewood Estates, transforming a rustic saison into Carillon, our Bière de Miel.

Pineapple, wildflower, and lemon blossom aromas erupt from the glass while delicate flavours of pineapple, Meyer lemon zest, and chamomile follow on the palate. The honey brings a taut acidity and a supple mouthfeel, bringing harmony as the fruit flavours echo through the aftertaste. A naturally carbonated beer born of Ontario’s local food production. 355 mL can, day 21 of the 2022 Toronto Brewing beer advent calendar; no canning date. Served slightly chilled.

Pours a hazy, translucent pale straw-yellow colour, giving rise to nearly an inch of soapy, fluffy white head that settles off within three minutes or so. A creamy collar and patchy, filmy cap survive on the surface, with a ring of lace clinging to the glass. The aroma is quite floral and herbal (sage), with hints of lemon, pineapple, mild acidity, honey and grainy, crackery wheat. Unique and interesting thus far.

That goes for the flavour profile as well - it starts off with grainy wheat, crackers, lemon zest and a punch of lactic acidity. Floral, herbal, spicy and zesty on the back end, with hints of sage, stone fruit, pineapple and a teensy bit of armpit funkiness lingering into an acidic lemon-honey aftertaste that dissipates quickly. Light in body, with sharp carbonation that relentlessly assaults the palate - I found it tiresome over the session, yet the fizzy soft drink mouthfeel and lemony acidity actually do complement each other.

Final Grade: 4.0, barely pulling off an A-. Carillon is not your average wild ale. The pineapple sage-infused honey makes for a uniquely flavourful brew, and I also think that the underlying beer (a saison) is especially well-suited for this sort of experiment. It's overcarbonated, but that happens sometimes with wild bugs and free sugar (honey) - besides, I didn't find it all that detrimental to the experience. I would definitely buy this again, and must encourage other BAs to try this "Bière De Miel" if they're able.
