Featuring the Hops Cascade, Chinook CGX, Citra Incognito, Cryo Mosaic, Cryo Citra, Mosaic, & Citra.
This new age West Coast-Style Imperial IPA features the brilliant clarity, lighter body, and crisp dryness of a traditional West Coast IPA without all of the bitterness up front.
To create this modernized Imperial IPA we combined several late hopping techniques more commonly utilized in “hazy juicy” IPAs to saturate the beer with hoppy aromas and flavors without overwhelming hop bitterness.
Uncharted Waters was brewed with a base of extra pale premium pilsner malt along with flaked rice to lighten the body and color.
Cascade hops were added to the mash to boost the aromatic thiol precursor content in the wort and a dash of concentrated Chinook CGX pellets were added as a first wort hop addition for some balancing bitterness. The vast majority of the hops were reserved for the cold side.
We get notes of bright orange zest, tangerine juice, fragrant geraniums, lemon mist, juicy white peach, cherry blossoms, red berry medley, hints of peppery dankness, tropical passion fruit, and pink grapefruit.

Billed as a "modern" West Coast Style, this West Coaster leaves behind the pine resin bitterness, and comes through with a milder bite. The pour is bright gold with (especially these days) incredible clarity. Flavor is ever so slightly dank, peppery. But it also brings out citrus and peach. Overall, a crisp, refreshingly light Imperial IPA with a unique approach. (Ahead of its time?)

Pours a crystal-clear, dark gold body capped with two fingers of soapy, eggshell-white foam; good head retention yields a half-finger of cap, large, frothy collar, and myriad spattering of chunky, webby/spotty lacing spread around the walls of the glass.
Aromas of pine meet pink grapefruit sorbet, with a backing of water cracker and floral guava residuals; an underlying resinous pungency peaks with tones of wet moss, leaving an edge of dank against white peach and flaky malt as the bouquet closes.
Taste brings boggy moss and white peach upfront, founded on a slight, flaky malt backbone as wet pine and pink grapefruit peel mark the back end of the profile.
Mouthfeel shows a medium-light body and a frothy sudsing of moderate carbonation, dispersing airy, prickly textures over the mid-palate to a modest dryness and distant bittering on the back end, culminating in a clean finish marked with a soft, resinous sheen.
Easygoing balance purveys a delicate constant of overripe citrus/stone fruits and airy conifer doused in concentrated hop oils; a refined yet understated effort.
