This dry Belgian-style of beer is fundamentally a table Saison originating among the mining communities on the border of France and Belgium. Brewed with Pilsner malt and a moderate percentage of wheat. Fermented with a characterful Franco-Belgian yeast and delicately hopped with Loral, Hallertau Akoya, and a pinch of Mosaic.

(draft pour in a Becher-style pint at Dock Street South last week... just recollections here...)
Went over after work to try this recent Beer Cup-winning brew... hazy yellow-gold liquid, delicate foam... subtly floral, subtly dough spice aromas... bit of an earthy, grassy hop and yeast top note, with a dry, floury-bready base... clean and light-bodied with a soft fluff to its lasting foam textures... they serve their beers too cold, but they did have cans of this, so there's more takeaway beers I'm interested to try, so I'll be back to grab a vari-e-teh and test this one at proper conditions (it was worse, bland/boring -13 Jun 2024) (2310)

Mildly hazy gold with a small head. Sourish aroma, lemony. Restrained tartness with a bit of sweetness and just a touch of bitterness on the backend. Little bit of lemon and wheatiness. Medium mouthfeel, easy to drink. Very nice.
