The Finer Points of Bad Behavior Volume VI: Strawberry and Brettanomyces Bruxellensis

Volume VI pairs strawberries from Seedling Farms with a strain of Brettanomyces Bruxellensis known for its white wine and Sweet Tart characteristics. Aromas of bright, fresh strawberries jump out of the glass evoking memories of strawberries sprinkled with confectioners sugar. The dry, lean body belies the sweet aroma and leads to a crisp succinct finish. Drink now while the strawberry aromas dominate or cellar lovingly to experience the sweet tart and wet hay characters to emerge.

500ml bottle poured into HF wine stem.

Appearance: Peach bodied beer with heavy concentration of red strawberry pulp & black strawberry seeds settling at the bottom of the glass. Fine bone white bubbles that stack up to a rather tall head with good head retention that sticks around most of the time you are drinking this beer.

Smell: strawberries, white wine, sweet-tarts, and earthy brett.

Taste: Strawberry flesh and seeds; the strawberry tastes very authentic as well. Sweet-tarts candies, watermelon, and rhubarb. Earthy brett and floral notes intermingle throughout each sip.

Mouthfeel: light bodied saison with medium/moderate level of carbonation. A soft and delicate bodied saison. Spritzy carbonation that is lightly dry. A very, very drinkable saison.

Overall: If there was such a thing as a rustic fruited saison, this would probably be what that is. Surprised about how good this fruited Saison turned out to be. Another really well done saison by Is/Was.

This one was an absolute gusher when I cracked it open - thankfully was just a few steps from the sink and get it in there and then into the glass pretty quickly. Pours a dark orange color - completely opaque and actually quite sludgy. There is a ton of fruit debris in the glass that slowly settles on the bottom. Thick billowy white foam head, but that dissipates pretty quickly leaving just a splotch of foam on top of the beer. Rather than lacing, dried rings of debris coat the glass as the beer is consummed.

Aroma is relatively dominated by the brett here - its got this nice sweet, fruity, wet horse blanket aroma. That sweetness around the edges is clearly from the strawberries. A bit tart on the nose, but not at all seemingly sour. I am getting a bit of that plastic bandaid aroma you can sometimes get from Brettanomyces bruxellensis. This is one of those beers that if you like brett, you will enjoy it -i f you don't, this is not going to change your mind.

Taste is mostly interesting because for as much as the Brettanomyces bruxellensis dominated the aroma, the flavor profile is quite harmonious with the strawberries really shining. I imagine this would shift over time if the bottle was left to age - but fresh the strawberries are bright and fresh. You get some light notes of clove, wet horse blanket, a bit of an earthy must, and then bright fruity strawberries providing a nice sweet respite. As I expected from the nose, there is a bit of a tart character to the beer, but its not sour at all. Really subtle peppery note on the finish.

Feel is rather smooth with a bright vibrant but overall gentle carbonation. Its not aggressively prickly or anything like that. Medium bodied with that fruit providing some heft and body to the beer. Semi-dry on the finish.

Overall its a really nice beer and one that I thoroughly enjoyed. The strawberries in this really shone through with the Brettanomyces bruxellensis providing a really pleasing funk.
