Bierè a Coupage brewed wit Carolina Gold Rice
If/When is a true collaboration woven from three threads with our friends at Hopewell. Three beers that trace the evolution of the Bierè de Coupage tradition of blending aged saison with fresh saison.
This thread is the base Bierè à Coupage or beer for cutting. It is the fresh expression of saison intended to be blended with the old stock. This Bierè à Coupage is brewed with malted Carolina Gold rice for a crisp nuttiness and hopped judiciously with Hallertaur Blanc hops.
Bière de Coupage is the tradition of blending fresh, young, beer with aged/matured beer. In this context 'Coupage' means to 'cut' or 'blend'. Traditionally, a fresh, often hoppy 'Bière à Coupage', or 'Beer for Blending' would be brewed then blended with aged beer to create the 'Bière de Coupage', or 'Beer from Blending'. Typically only the blended 'Bière de Coupage' would be consumed but we took the approach to deconstruct it so you can drink the different components that go into blending the 'Bière de Coupage' next to each other.
This one was bottle conditioned without any added yeast.

I'm glad to see strategic collaborations like this. I had Hopewell's Family Saison with a funky pizza over five years ago after first opened. I thought they understood the saison well for a very young brewer. But Hopewell went on the typical brewpub path of hoppy ales and lagers and Wild inventions. I've since seen few traditional saisons from Hopewell and they seemingly developed little more of the talents of farmhouse ales.
In the meantime (and I speculate), Hopewell meets Is/Was... who is a Chicagoland-famous two-year sold saison brewer with good recipes and lots of talent, but no tanks. So, Hopewell's arrested development for saisons gets a shot from a gypsy brewer. If/When is a match made in saison heaven. And for this, I give this saison very high Overall Hugs. This also is my 10th ale from this two-year old. That has to be some sort of a personal record for crabby old Euro-Saison heads.
If/When Looks like a yeasty saison, active foam until the glass is empty. In my nose, I don't get the active, full-fruit bowl of a great saison; but If/When's Smells are subtle and good. Tastes are balanced, but there is an after-taste that needs to be messed with by food. In my mouth, If/When is soft and active and can stay there as long as it wants.
I also have to think more about this Biere de Coupage process and maybe the way to do that is to go get the other two saisons in this series of collaboration.
