a sturdy and flavorful saison, not going to say no frills because it uses multiple yeasts and some cool hops, but then again i wouldnt really call those frills, and this presents itself as fairly simple at first, maybe slightly modern with the more robust and not noble hop profile, but its basic and wheat and driven by french saison yeast with familiar esters, nothing radical about it, but once i let it sit and open up awhile, i really start to appreciate some subtle complexity to it, especially on the fermentation side. behind the white winey and green banana notes of the french strain, i get a little young brett, just starting out but fully intentional, giving just a little funky twang to the finish when this is at temperature, i really appreciate this layer and it keeps the beer from being samey or generic. the hops have some nice herbal bitterness that work with both fermenters, i get some clean citrus there too, a grassy layer, and some bite at the end. light bubblegum and honey, sturdy simple wheat malt at is core, and lots of carbonation to keep it all moving, and very dry despite the grain flavor. its neat beer, different but in a low key way, and i ended up really liking this by the time i was done with it. great pizza beer, and i liked this more and more as it opened up. these guys really are making great beers, and still totally flying under the radar. get hip to it!
