A saison refermented on raspberries

Himmat is a saison refermented on raspberries from Sidhu Farms in Puyallup, WA. Sidhu Farms works with @farmstandlocalfoods to provide us with most of the berries we use in our beers including the blackberries found in Tove. Rich and full of flavor, we are always excited to receive their fruit.

Providers: Crosby Hops, Farmstand Local Foods, Sidhu Farms, Skagit Valley Malting

A: Pours a reddish/pink color. With a bubbly white that quickly rises and falls at that same rate. Which fizzles out to leave just the vibrant pink colored liquid behind.
S: Yeast, and berries all the way. A light funk, but the berry fruity aroma is very fresh.
T: That dusty, musty yeast leaves a bit more "funk" taste wise. Acidic and tart uber fresh raspberries which is just really enjoyable. With just enough oaky/vanilla character to balance that acidic/sweet fruits.
M/O: A lighter body, with crisp and effervescent carbonation. Which becomes refreshing and bright. All leading to a really enjoyable fruit Saison to drink and come back to.

There is enough yeast character that I can accept this as a Saison, but really its a fruit beer through and through. A really good one at that. A fresh fruit character shines and is vibrant throughout. As always from this brewery, really well done.

elite level saison at its core, incredible fruit profile here, lots and lots of natural raspberry goodness, tangy and bold, amazing depth of flavor here, so wonderfully well refined too. fair isle just continues to deliver, one of my favorites anywhere now, and this is among their best for my money. a bright and lovely ruby red jewel tone, a short pink stained head that settles back pretty fast, looks light and delicate and pristine, just a bit of sediment clouding up the last little bit from the bottle. the aroma on this is fantastic, light funk, more tang than their house yeast usually delivers, not sure if age is a factor here, i do not believe this is oak aged, and it doesnt need to be. beautiful floral character before the fruit in the nose, red roses and hibiscus, some bitter and tart notes here, some jammy intensity from the berries but this never seems sweet, neat earthy grain underneath but very light, and some cool esters from the yeast from white wine to pear and soft wintery spice, crazy how complex this is, the fruit and yeast work together so well. the berries drive the flavor, highly authentic and highly dosed, juicy, peak of ripeness, permeating the tongue with the high carbonation. herbal as it warms a little, lemon, thyme, wet lawn, mild but evident acidity, minerals, light nuttiness from the malt, quite light in body, perfect raspberry in here, dry to finish. cool funk, almost lambic-like for a flash. just magnificent beer, so flavorful, drinkable, and distinctive. i could pick this out as fair isle from the nose alone, even though this is a little different side of their culture. not to be missed!

Poured from a bottle at fridge temp. I honestly had no idea what this would look like, but was surprised by the vibrant red/pink that came from the bottle. Looks gorgeous. A relatively thin layer of lightly colored head. The nose is insane. Raspberries that will blow your mind. So fresh and intense. Some vanilla, lemon, very tart, grass, a nice sweet candy layer.

The taste is similarly fantastic. Very raspberry forward. Lovely. Tart, dry, sweet, red grapes, plums, tannic. Just lovely.

The mouthfeel is fairly light. The aftertaste is on the sweet side. Lovely beer.

Fine reddish-pink body, clear; aggressive carbonation; nice head with a slightly pink tinge, frothy. Bold raspberry smell. The taste brings a lot of fresh, tangy raspberry flavor to the palate; tart; white wine. Light to moderate body; airy and acidic; juicy with just a twinge of dryness.

This is a very raspberry-forward beer. The berry taste is fresh and fairly stunning but doesn't bring much else to the palate. Still, it has a lot of pizzazz, and there is something to be said about that.
