Ami Jean is a saison refermented with apricots, peaches, and plots grown by Collins Family Orchards. Created with ingredients farmed in the Pacific Northwest. Fermented with our house blend of wild and feral yeasts and bacteria. In the tradition of saisons, we recommend drinking this beer fresh.

Pours a foggy, hazy golden-yellow with two fingers of white foam. Aroma is straw, cellar stone, grassy, and herbal hops, with citrus behind. Finish is tart. Flavor profile is cellar stone, straw, grassy, herbal, and citrus hops and light earthy malts. Again, the finish leans tart, bookending the flavor profile. Mouth feel is effervescent with a soft texture otherwise. Thickness is medium. Overall, classy saison with a little extra hop love.

750ml bottle split between a pair of angular wineglasses. Batch number 1, bottled September 2020. Foamed over slightly on opening.
Pours a hazy straw yellow with a medium sized head. Head fades to a generous ring and a sparse layer. Smell is primarily fruity tart, unripe peaches and apricots come through clearly, with a little bit of a funky/woody aroma as well.
Taste is mildly fruity, mildly tart, mildly funky, but rich in some way I haven't the words to describe. Earthy might be the best descriptor that I can come up with, but it leans in a slightly sweet direction and a slightly bright direction.
Mouthfeel is very light, very dry, just disappears. Overall, this is a very nice beer.
