estery clean saison here done with pink peppercorns, a really pleasnt drink, although still without much interest on the fermentation side, its done warm, high tone belgian esters abound, green pear and banana, taffy and gum, apple and clove spice, its missing the rustic or wild component that i love in the style. that said, my critique of the other one i had while i was in, the jonny saisonny, was that something was missing, and i think this one solves for that with the pink peppercorns. the yeast profile is similar in the two, clean but flavorful belgian type, allowed to run, but the herbal, floral pink peppercorns add a lot here. notes of rose hip and freeze dried berries in the nose, tea and coriander in the flavor, this is the needed complexity, and even though it doesnt make this old world and farmy at all, it makes it more complex beyond the fermentation profile and i really dig it. hints of lemongrass and orange as it warms, some minerals showing up too, and just trace alcohol on the swallow. simple malt base, pale barley and white wheat, all tastes fresh, and the beer is rather professionally made. again, this would slay with a brett pitch, a wine barrel treatment, or even some raw wheat or spelt in the mash, a little too polished, but overall this is quality, and these guys are killing it. i was impressed across the board when i was in this time!
