Keeping Together beer #20
Bright saturated orange, fluffy meringue cap that sticks around, leaving drippy lacing in it’s wake. Long lasting surface coverage, a skim that never breaks.
Subtle smoke and brie rind funk aromas, grainy malt still comes though.
Taste is tart and lemony with a botanical edge, and initial mild smoke. Finish is dry and earthy, mildly ashy forest floor impression.
Tart, savory, mild smoke like a Lichtenhainer or Grodziskie with infinitely more depth. Tightly beaded carbonation, gentle tartness.
Overall this was a great one, sad to have missed it fresh, but it’s definitely one that aged well for me. Cheers to Averie and her next brewing endeavor in Santa Fe!

so sick to finally get to try some keeping together beers, these are worthy of the high praise and hype they are receiving, totally and truly. this is a clever one, a light and funky saison done with lavender smoked malt, really unique stuff, delicate as they come, especially so for a smoked beer, wow. its pale and rather clear, bright in the glass with a short but lasting inch of white head, tons of carbonation activity. this smells funky before it smells smoked, brett and bacterial tang together, not sure if there is also a saison yeast strain in here or not, its subtle if there is, tangy and lemony, a little vinous, mouthwatering, and its the same in the taste as it is in the aroma. the lavender is right there with the smoke, just below the surface, fresh and floral, tea-like, botanical but not like perfume or overdosed, and there is some apparent bitterness from it in the second half. the smoke is awesome, woody to me, soft and smooth, neat with the pale grain layers in this, not too much, present the whole way, a richness to it even though this is so dry and airy overall, neat with the brett too. cool balance to this, very complex and distinct, but also tame and drinkable, elegant even. a pretty special beer, original use of smoke to me, lovely effervescence, stoked to have gotten the chance to drink this!
