Mixed culture saison brewed with Sugar Creek Malt Co. locally-malted buckwheat, rye, barley, and oats; hopped with EKG, Citra, Centennial, Hersbrucker, and Simcoe. Aromas of dried pineapple, nectarine, and unripe strawberry with hints of white tea and peppercorn. Old World hops offer delicate floral notes of geraniums or calla lilies. On the palate, flavors of tangerine, lemon curd, and kiwi overlay a rustic malt profile of drop biscuits and cream crackers. Buckwheat lends a light funk that integrates nicely with the fruit-forward fermentation profile. Medium in body with creamy carbonation; bright acid on the palate balances the bitterness in a dry finish. (5.6% ABV)⠀

This is the first “official” collaboration for KT—brewed with a dear friend, one of the brilliant minds behind Escarpment Labs in Ontario, Richard Preiss. We wanted to make a beer that incorporated both Old World and New World hops; ingredients that intersected the traditional and contemporary. We made this beer on March 13th, 2020—right before Chicago went into lockdown. That day lives in my memory as the turning point from pre-pandemic world into the world we exist in now. In hindsight, the creative origin is a rather poignant metaphor—the beer was made at a moment in time that represented both the old world we knew, and a new world we couldn’t fully understand. Inspired by T.S. Eliot's, Burnt Norton, I look back on that day as “The Still Point of the Turning World”, a moment of presence where past and future existed simultaneously as abstracts, uncharted and uncertain.⠀

Thank you to @fbarber for this Saison. Poured into a tulip glass. It pours a cloudy, dirty tangerine color with a half finger of foamy, milk-white head and thin film of lacing that dissipated quickly due to the carbonation. Its smell offers lemon peel, cracker, musty, earthy notes of coriander and clove, and rye. The taste follows the nose. It opens with tart lemon peel and typical Belgian spicing - coriander, clove, along with a distinct Brett yeast. It also has a dry, herbal, rustic, earthy taste of rye cracker. The mouthfeel is typical for a Saison: crisp and clean with lively carbonation and an easy-drinking 5.6% ABV. Overall, this is a very fine Saison. The typical taste and smell are augmented by an earthy, rustic quality that is most enjoyable.

Cloudy yellow with a white sudsy head and thick lazy lacing. Lemon juice, buckwheat, pressed flowers, rye, bready yeast, and plenty of barnyard funk in the nose. Beautiful in the taste as well, same elements but with the buckwheat and rye being a great counter to it all before complimenting the oak. Everything is so delicate and light, grains make their presence known in a rustic way with oak, funk and slightly sour notes too. Beautiful saison

Initially pours a dark burnished gold color (its showing up much lighter than it actually is in my picture for some reason). Huge pillowy, bubbly head form, then slowly collapses until a 1/4 of lovely velvety foam remains on the beer. Splotchy lacing sticks to the glass as the beer is consumed. Aroma has notes of lemon, lime, acidic citrus, grain and a spicy rye note. There is a touch of tart, acidic funkiness to it. Twangy is the word that comes to mind ...

Taste follows the nose with notes of a twangy tart lemon and lime note with notes of grain, spicy pepper, peppercorn, rye and some yeasty notes. The rye is really interesting with the buckwheat and acidic tartness - its not as smooth as some of the other saisons from Keeping Together. Feel is light, bright, vibrant and effervescent. Moderate carbonation. Semi-dry on the finish.

Overall this is a very nice saison from Keeping Together.

Faintly foggy yet sparkling pale gold with a moderate white foam head settling to a creamy uneven blanket that retains well, lifting up around the edge.

What a beautiful brew, my god. Delicate floral notes with a unique but finely faint funk make this brew seem way wilder than the locale it hails from.

The medium body is bolstered by a fluffy froth that sparkles into a cleanly satisfying semi-dry finish, exhaling wild herbs and lemony honey. It's so absurdly drinkable, soft, delicate, and unique. While it's got a lightly spicy, horsey brett note, it overall translates as honeysuckle and mild apricot, with a hint of biscuit malt that exhales right at the tail end. There's pretty much no acidity, as its not really tart, but at the same time, it's just shy of it.

This is really verging into Farmstead* territory, and away from her experience in the funkier, woodier realm of Jester King. That's a really impressive progression for such an early start at this new project.

750 ml bottle into a tulip glass. Had 10/3/20.

Pours a bright yellow, slightly hazy, with a one and a half inch foamy head with some foamy lacing. Aromas of Belgian yeast, rye, grain, strong lemon, peppercorn, floral hops, light malt. A generally fruity aroma that leans to citrus, and a lightly sweet aroma. Similar flavors- Belgian yeast, rye, malt, lemon, grain, floral hops, light funk, light herbal hops. A little tart and a generally spicy and fruity taste. Smooth, a solid light to medium body, fairly dry, well carbonated.

The rye, buckwheat and hop blend give this a fairly unique profile that stands out. Solid from top to bottom. Look forward to trying others from this brewer. Well worth a purchase.

Poured into a Hill Farmstead stem glass at fridge temp. Beautiful beer. Bright, clear and effervescent. It's the head that's the standout here. Tons of thick, ivory colored head that lasts and lasts and lasts. I poured this 5-10 minutes ago and there's still a finger's worth of head. Very inviting appearance. Smell is somewhat restrained with hints of pineapple and flowers. Taste is really nice. Crisp, clean & just the right amount of funky. This may not make any sense, but I'm picking up some smokey biscuits. Not sure what that is, probably just the funk, but it adds a cool dimension. Medium carb and a nice dry finish. This is a wonderfully done saison.

750ml bottle poured into HF wine stem.

Appearance: Bright and clear yellow bodied beer with bone white head. Good head retention; lots of small tightly packed bubbles. Scant lacing all over the side of the glass.

Smell: Lemons, Floral, earthy, herbal hops. Hay and well water / mineral water.

Taste: Lightly tart lemons. Earthy, grassy, and floral hops. Lightly spiced yeast / white pepper. Light Brett flavors, though I am not sure if Brett was used to make this Saison. The malt profile primarily has that doughy type flavor with a hint of lightly toasted grains similar to that of a Pilsner type malt. So much complexity is woven into every aspect of this Saison!

Mouthfeel: medium bodied beer with moderate carbonation levels. Creamy body with a crisp and bone dry finish. Very very drinkable. You can easily drink the 750ml bottle yourself. I plan to do so.

Overall: This is a fantastic rustic Saison. I really appreciate the oats used in this beer; the texture of a creamy body from the oats plus a lightly dry finish really make this Saison's texture/mouthfeel incredible. Keeping together is probably the best Saison brewer in Chicago. I am enjoying these Rustic Saisons and the fact that they not the overly tart type of Saison's that are becoming more prevalent these days. Keeping it old school and I like the traditional expression of Saison's so much more than the tart expressions of the style. Avery makes mighty fine old school rustic Saisons with her own creative twists.

Pale pastel yellow gold color, slight haze, rapid carb trails and a billowing head with peaks and crags. The lacing is very nice and coats the glass with delicate drippy patterning.

Intense lemony nose, citric and floral, mild Brett in the periphery adds a nice layer of complexity.

Tart and lemony taste, fruity hops with an ample dose of dry musty Brett, bone dry in the finish with some light traces of pepper and herbal hops. Light and ethereal, effervescent and a delight to drink. Ample carbonation with a finely tuned texture. Overall, this is extremely well done, all the elements work in perfect harmony. I'll be looking forward to future releases from Keeping Together. Watch out Phil Harmstead!

750ml bottel, undated, poured into a stemless wine glass.

The beer pours a cloudy but bright golden color, lemon hues with a foamy white head, fluffy and tall with excellent retention and great lacing. The aroma is excellent, bright floral bouquet, lightly herbal with lemon citrus and a touch of tropical fruit, biscuit malt, mineral water while soft berries sneak out as it warms. The flavors are very nice, strong pale and doughy grains lead the charge while there is an excellent floral and herbal quality, bright and delicate, vibrant and very expressive with a nice profile of lemon peel and soft stone fruits, a bit pricklier and spicy towards the backend with a more green and earthy temperament. The mouthfeel is good, coating with a very lively medium body, crisp and dry with an easy finish that borders on tart.

Verdict: A really excellent saison from Keeping Together. Bright, delicate and refreshing with a nice layering of complex flavors that range from floral and herbal to earthy and green to bright and fruity with a nice maltiness to tie it together.
