Undulant & Impermanent is a 6.5% ABV barrel-aged saison re-fermented with maple-roasted carrots and steeped on spent fernet botanicals from Rhine Hall Distillery.This beer is basically autumn in a bottle. A depth of toasty spice character—cinnamon, clove, nutmeg—dominates the aroma. Undertones of cocoa powder, vanilla, cherry cola, and soft maple linger in the nose as well. The carrots are present but soft, reminiscent of roasted acorn squash or sweet potato casserole. The flavor offers more spice complexity, but it is well-integrated and isn't biting. Notes of Chinese five spice, homemade granola, caramel red apple, and marigold flowers are found on the palate. Sour, spiced, and silky.

500 mL bottle. Clear pale golden. Smells of sweet carrots, a little maple, warming spices, and bright acidity. Tastes fascinating. Oak, barrel, lots of clove, other warm spices. Back end has hints of deep sweetness. Tangy finish. Medium body, very dry. This is out there. But all the aspects come through and play together very nicely.

Pale gold, two fingers of foam that dwindles after a few sips. No lacing or skim either after a few minutes.

Savory aroma, mildly acidic. Over time the roasted carrots become more noticeable, along with mild savory spices. Funky earthy farmhouse yeast, nutmeg, aniseed. Mildly woody oak as it warms, nice complexity.

Tart and lemony, earthy and savory roasted root vegetable, mild licorice and toasty notes in the aftertaste. The tart and savory elements work well together, neither is overbearing. Tastes like Fall in a glass. Medium bodied with a supple feel and light carbonation. Overall this is really unique and fun to drink.

500ml bottle poured into HF stem wine glass.

Canned on date of 9/20/21.

Appearance: Yellow bodied beer with golden yellow bodied beer with bone white head. Head drops down to thin ring around the perimeter of the glass. no lacing noted.

Smell: tart and spicy nose. undertones of maple sweetness. lightly earthy funk. this smells outstanding!

Taste: delicate tartness that is light and citrusy. Lightly funky with dry oak notes. Herbal notes are a bigger flavor here. Also has balanced spicy notes. There are hints of maple and baby carrots in the finish. Lots of layers of complexity. A lot of flavors that I have not had in a beer before and that really stretches my palate. Not necessarily in a bad way either.

Mouthfeel: light bodied saison. on the lower end of medium carbonation. Creamy texture with a soft delicate silky body. lightly dry finish. very drinkable saison.

Overall: Avery really knows how to take weird ingredients and make them all play well together in saisons. She really is a beer brewing pioneer; her creative alliterations of what saisons can be are boundary pushing, yet the beer style of saison's can really play to those strength's. Her offerings are always very pleasant and well done; even though I read the beer label and I think "how the hell will that work"? Well, each time it does work! This is my second Keeping Together barrel aged saison and it's a beautiful beer for sure. Keeping Together will be missed in Chicaoland area once all these bottle stop being sold.
