saison type with sauvignon blanc juice, super cool beer, cleaner than expected, this isnt a wild beer, i dont believe it sees any oak, so its lighter than others like it, but its pretty bold on the grape juice side, a neat recipe. blonde and unassuming in the glass, although i appreciate the stemware at the brewery. moderate shine, a touch more density than its alcohol strength would suggest, but well refined looking and short headed but plenty bubbly. aroma of sweet and fruity white wine, to me as much wine already as just the juice, perhaps cofermented with this clean saison yeast on the cooler side, there might even be a champagne yeast element to it, pear and apple notes too, somehow a little wild blueberry, white pepper and coriander spice, and most of this is in the flavor too. there is some brassy mineral forward wheat malt, off dry, at the core of this, some bready pils malt too, but simple overall there. the fruit and the yeast do most of the work, green banana or plantain, green apple, white florals, not quite as vibrant as this grape can be in wine, but its still distinctive. a touch sweet most of the way, never getting into spicy or rustic uniqueness on the yeast, but i like the complexity still, and overall this is drinkable, weird, and good. the most ambitious beer we had here, but also arguably the best...
