Rustic ale brewed in collaboration with Second District brewing and our good friend Scott Morrison. A long, slow step mash with a simple malt bill of Belgian pils, hopped in the boil hopped with Styrian and east Kent Goldings. We sourced the yeast from a famous brewery in Tourpes, BE, said a little prayer and let it ferment without temperature control. The flavor is clean and dry. Aromas of lemon, pear, and earthy hops, with a distinct minerality and a balanced bitterness.

Pours clear gold with a finger of off-white head. Solid retention and thin sheets of lacing.

Distant lemon, pear and soapy Belgian yeast in the nose.

Dry tasting with similar qualities from the smell. Slight hints of mineral water, lightly-toasted white bread and stale hops that leave a kiss of earthy bitterness in the aftertaste.

Relatively light bodied with soft fizz in the feel.

Nice, traditional flavors in this one make for a worthy saison.

Wonderful wild super fresh aroma. Dry, crisp. Perhaps a bit too sour for me , but very well balanced, refreshing. Great beer.

pours a clear light yellow color, foamy white head. aroma is mostly herbal yeast phenols, pale malt, and earthy hops. taste is similar, although not quick as dry as some saisons. thin to medium bodied.
