Solera foeder-aged mixed fermentation saison brewed with NY state malt & hops. Complex & tart with tangy, bright acidity. Rustic with soft oaky notes, light earthy funk and hints of vanilla & citrus.

From the bottle, pours a cloudy golden to beige color. A large head rapidly dissipates.
In the nose, I first pick up bready malt notes of honey, cracker and wheat. The Foeder aromas emit lightly funky, musty,sour, oaky, and vinous notes. Fruity and tart aromas of, banana, peach, grape, lime as well as hint of floral, grassy and peppery spices.
Moderate to assertively sour with notes of tart fruit, peppery spices and oaky notes of Foeder. The palate is very dry with musty, funky and rustic notes. A sturdy wheat, cracker and honey malt backbone is balanced by grassy, floral and herbal spices, along with a peppery bitterness. . Fruity notes of lemon, lime, white grapefruit, underripe peach, kiwi, and green grape add a juicy tartness.
Medium bodied with a dry, oaky and tart finish. The mouthfeel is smooth, even slightly creamy. wheat lively moderate carb
This was great. A complex yet very refreshing sour wheat Saison. Nice Foeder character. I would have again.

January 2021 bottle from the brewery in Brooklyn. Pours an opaque light golden yellow with a finger of creamy white head that sticks around, nice lacing, smell is green apple jolly rancher, green apple peel, white grape must, wet hay, fresh cut grass, and oak, hints of lemon zest, yellow cake, kiwi, and pineapple, taste is funky tart overripe white grape flesh, fresh cut grass, wheat bread, apple cake, hints of peach and apricot skin, finishes with oak and white grape must, mild powdered sugar/vanilla on the aftertaste, feel is light, high carbonation, mild acidity and carbonic bite, dry finish. Funky fruity white wine cake.
