Our Imperial stout brewed in collaboration with Joey Pepper and aged for 22 months in Thomas Handy barrels before being conditioned on toasted almonds and a blend of Ugandan, Madagascan, and Mexican vanilla.

2022 vintage (released on 8/31/2022); consumed on 1/19/2023
Pours a viscous, motor-oil black body topped with just over a finger of fluffy, mocha-hued foam; solid head retention yields a spotty cap, larger, frothy collar, and a modest display of webby lacing holding fervently to the walls of the glass.
Aromas of almond flour meet rich, floral vanilla building to decadent Funfetti frosting upfront, peaking with notes of fresh almond cookie as underlying sweet cocoa finds subtle barrel roast texturing and deepening vanillins over time.
Taste shows floral vanilla, tinges of smoked caramel, and level cocoa roast immediately apparent; milk chocolate develops against drying oak and a splash of sweet rye fades past the mid-palate against a slight malt char and lingering barrel tannins through the finish.
Mouthfeel offers a silky medium body, modestly carbonated, and sporting oily textures fading to a deft creaminess over the mid-palate before a deft barrel char grazes a withering warmth into the close.
Rich yet restrained, a fervent, vivid adjunct profile finds exceedingly competent harmony with barrel and base; sweetness is rounded and intent, yet beautifully in-flux with the profile as a whole.
