Foeder fermented saison conditioned on prickly pear & thyme. Light funk and touch of zippy tartness meld perfectly with the tangy fruitiness of prickly pear and the earthy notes of thyme. Refreshing, light, and bright.

Raspberry red body; mostly clear; thin yet lasting head, dense and creamy texture. Overarching smell of wet oak and dried herbs. The taste follows closely with the smell; dried grasses and herbs; light presence of sweet fruitiness. Medium body; slightly coarse on the palate; phenol dryness at the finish.
The foeder aging really overshadows about everything else with the this beer. The thyme hardly comes through although the prickly pear is more dominant, yet the wood-like overtone just really wreaks havoc with the beer's balance.
