Notes via stream of consciousness: This is a saison with honey and ginger that's been either fermented or aged in a foeder. It's quite carbonated and plumes of tiny bubbles are rising quickly within the hazy deep golden/amber colored body. Bolstered by the bubbles rising from below the head is a persistent cap of white foam. Haha! I can hear it fizzing like a soda-pop. There's not a lot in the aroma but you can smell the ginger and there's some lightly sweet and bready malt. The taste is fuller with a pleasant fruitiness that's like apple, pear, and berries. The honey and ginger are there as well, and you get some oak from the foeder as well as some delicately spicy and clove-like saison yeast character. It's not very bitter but it still finishes mainly dry with just a dollop of sweet honey lingering along with a swirl of soft spiciness. It's a very delicate and well balanced beer that's quite charming. The effervescent carbonation tingles your tongue, and the body is medium but on the lighter side. It's outstanding. The one thing that's surprised me though is that there's very little in the way of lacing, and what is left behind fades away. Still, this is a fantastic little beer.
